Meva va sabzavotlarni uzoq muddat saqlash uchun ularni quritish talab etiladi. Quritish jarayoni eng ko’p energiya va vaqt talab qiladigan jarayonlardan biri. Quritish jarayonini yaxshilash uchun mahsulotlarga birlamchi ishlov berish jarayonni tezlashishiga olib keladi. Bunga mahsulotni kesish, maydalash, mikroto’lqinli, infraqizil nurlar va elektr maydon impulsli ishlov berish mumkin. Mahsulotlarning turlariga qarab birlamchi ishlov berish usullari tanlanadi.
